Barley goes well with vegetables, meat products, and seafood. My today's recipe is perllotto with pumpkin and two types of onions in a slow cooker.

Ingredients:

  • pearl barley - 1 cup.
  • pumpkin - 300 grams.
  • red onion - 1 pc.
  • leek - 1 stalk.
  • garlic - 3 cloves.
  • vegetable broth (or water) - 600 ml.
  • cheese - 100 grams.
  • bay leaf - 1-2 pcs.
  • salt - to taste.
  • black peppercorns - 2-3 pcs.
  • olive oil - 1 teaspoon.

How to cook perlotto with pumpkin in a slow cooker:

1. Grind both types of onions. We cut the red into thin half rings, the leek into rings. If you could not get a leek, then you can replace it with ordinary onions.

We shift the vegetables into the multicooker bowl (do not forget to pour a small amount of olive oil on the bottom). We set the multicooker to the “Frying” mode, set the timer to 25 minutes. We will fry the onion for 10 minutes.

2. We clean the pumpkin by cutting off the skin and removing the seeds. Cut the pulp into small cubes. Pass the garlic through a press or finely chop. We send the prepared vegetables to the bowl and fry for 10 minutes.

3. Put the barley to the vegetables, fry everything together for the remaining 5 minutes before the beep about the end of the program.

Although the classic version of perlotto is made from dry cereals, I still recommend pouring cold water over barley before cooking (6-8 hours in advance). This will reduce the cooking time of the dish by 25-30 minutes.

4. We switch the multicooker to the "Extinguishing" mode (Pilaf is also suitable), set the time - 40 minutes. Pour the broth into the bowl in small portions (I used a ladle with a capacity of 150 ml.). Simmer, stirring and adding the broth as the barley absorbs it.

You can use chicken or vegetable broth. If it is not at hand, add plain water.

5. With the last portion of the broth, about 10 minutes before readiness, add seasonings: bay leaf, pepper and salt

6. Cheese (the best option would be parmesan), rub on a medium grater and divide into 2 equal parts. One of them, after the multicooker completes its work, add to the bowl and mix. When the cheese has melted, the dish is ready.

Barley with pumpkin in a slow cooker turns out very tasty and fragrant. Even those who were suspicious of boiled barley eat such a dish with pleasure for breakfast, afternoon tea, and even dinner. Moreover, you can create porridge both sweet and salty - to your liking. You can even add a little orange flavor - the porridge will turn out with a citrus flavor and a bright orange color - even the children will not guess that it is created with pumpkin.

Remember that barley is cooked for a long time, so the grits can be soaked in boiling water in the evening so that by morning it swells up properly and boils for less time. In no case do not close the lid of the equipment when cooking pearl barley - abundant foam will form, which will pour out over the edges of the equipment and you will have to wash it completely!

So, prepare the necessary ingredients for making barley porridge with pumpkin in a slow cooker and let's start cooking!

Rinse pearl barley in several waters until the liquid becomes completely transparent.

Then pour the washed cereal into the multicooker bowl and add salt and granulated sugar there.

Pour in warm water, preferably boiling water, activate the "Cooking" or "Porridge" mode on the display for 40 minutes, boil the dish without closing the appliance with a lid. 5 minutes before cooking, add the butter and stir into the porridge.

Peel a piece of pumpkin and grate it with small cells. Add to bowl 5 minutes before done, stir. Wait for the beep, stir again and close the lid of the appliance, leaving the dish on the heating mode for 10 minutes. During this time, barley will absorb the pumpkin aroma and taste, excess liquid, and become juicy and fragrant.

Put the pearl barley porridge with pumpkin cooked in a slow cooker into portioned plates and serve warm to the table.
